April Meal Plan

The April meal plan has gotten off to a great start. It really helps to have so many kids around here who can really cook!

Birthdays and Holidays

We, of course, have a few birthdays to celebrate in April. My son, Jesse, is turning 21, and I have a couple of grands celebrating their birthdays too. We will be doing some kind of celebrating on these days.

We are planning a HUGE meal on Resurrection Day. (Easter)

Sophia already made some awesome chicken wing dip for one meal.

Amazing Desserts!

The girls have been keeping me happy with all of the awesome desserts they have been making lately!

Judy, age 16, wants to open a cupcake shop. I get to reap the benefits of all of her practice cooking! She made these yummy strawberry cupcakes with lemon frosting. It tasted just like spring! 🙂

Sarah, age 11, made this delicious coconut cake! This was absolutely amazing! Bring on the tea!

Olivia has come over a few times this month and made apple crisp and pumpkin pie. Yum! I think these two things make the BEST breakfast food!

Tuesdays and Fridays

I love Tuesdays and Fridays for the simple reason that there is no wondering what’s for dinner.

Sarah is still declaring Tuesdays Taco Tuesdays.

Judy is still making her famous pizza every Friday night.

Wednesdays

Christina, age 14, loves to cook all things chicken. Wednesdays are her days to cook, so we know it will be some type of chicken meal each Wednesday. She makes amazing fried chicken!

Mondays

Sophia, age 18, cooks on Mondays. She typically likes to keep things simple and basic. She did, however, make that awesome chicken wing dip the other night. Sophia loves to serve homemade mac ‘n cheese, sandwiches/homemade subs, or leftovers on her day.

Thursdays

Thursdays are normally smorgasbord day. Whatever is leftover in the fridge is pulled out and served. I like to call it Party Day! Who doesn’t love a party!

If there aren’t enough leftovers, then we just have breakfast for dinner.

Week-ends

I like to make at least one big meal over the weekend. It is usually a big pot of spaghetti, soup, or roast. I like to cook enough to serve my HUGE family, plus have enough so I don’t actually have to cook again for the rest of the weekend. 🙂

I am sure we will be eating a lot of beef this month too since we just ordered a bunch from some friends who had a steer butchered.
